Kashmiri Biryani

Kashmiri Biryani:

Ingredients:
  • 1 Kg - Basmati Rice
  • 1 Kg - Chicken
  • 750 Grams - Mutton
  • 150 Grams - Ghee
  • 200 ML - Milk
  • 2 tsp - Curds
  • 2 tsp - Red Chilli Powder
  • 1 pinch - Asafoetida
  • 1 tsp - Garam masala powder
  • 1 tsp - Dry ginger powder
  • 1/4 tsp - Cardamom Powder
  • 2 tsp - Fennel seed powder
  • 1/4 - tsp Kewra essence
  • 2 - Grams Saffron
  • Salt to taste
  • 1/4 - tsp Sugar
Preparation:
  • Heat ghee in a pan.
  • Add assafoetida, and mutton pieces.
  • Fry and add curds. Fry till pink.
  • Add salt and water, fry.
  • Add bayleaf, chilli powder, ginger powder, fry and add about 1/2 lit water.
  • Add 1tbsp. fennel seeds & 1/2 tbsp garam masala.
  • Cook till done.
  • Keep mutton pieces separately.
  • Now boil two lit. water by adding 2tbsp. salt.
  • Tie in a piece of cloth garam masala, rest of the fennel seeds & put in the boiling water.
  • Add rice & cook on slow fire till half done.
  • Separate rice from rice water. In a baking tray altrnately arrange rice and mutton layers.
  • Add ghee and milk & cook till done in a preheated oven.
