Kashmiri Biryani
Kashmiri Biryani:
Ingredients:
- 1 Kg - Basmati Rice
- 1 Kg - Chicken
- 750 Grams - Mutton
- 150 Grams - Ghee
- 200 ML - Milk
- 2 tsp - Curds
- 2 tsp - Red Chilli Powder
- 1 pinch - Asafoetida
- 1 tsp - Garam masala powder
- 1 tsp - Dry ginger powder
- 1/4 tsp - Cardamom Powder
- 2 tsp - Fennel seed powder
- 1/4 - tsp Kewra essence
- 2 - Grams Saffron
- Salt to taste
- 1/4 - tsp Sugar
Preparation:
- Heat ghee in a pan.
- Add assafoetida, and mutton pieces.
- Fry and add curds. Fry till pink.
- Add salt and water, fry.
- Add bayleaf, chilli powder, ginger powder, fry and add about 1/2
lit water.
- Add 1tbsp. fennel seeds & 1/2 tbsp garam masala.
- Cook till done.
- Keep mutton pieces separately.
- Now boil two lit. water by adding 2tbsp. salt.
- Tie in a piece of cloth garam masala, rest of the fennel seeds &
put in the boiling water.
- Add rice & cook on slow fire till half done.
- Separate rice from rice water. In a baking tray altrnately
arrange rice and mutton layers.
- Add ghee and milk & cook till done in a preheated oven.
